Tiramisù - none for me....all for you!
Over the last decade my meditation practice has steadily increased my awareness....and helped me decrease my consumption of dairy...especially desserts that contain cream or milk. Noticing how you feel after you eat something gives you insight into what and what does not work for your body. For me, dairy definitely does not help or feel good. However, 3 of the most important people in my life; my husband and two sons, adore Tiramisu so if my mother in law is not around I gladly make it for them. Today is my oldest son’s 16th birthday (16!) so of course I made it for him!

Tiramisù
(takes about a half an hour plus 8 hours for chilling)
Ingredients:
2 ¼ cup Mascarpone Cheese (2 containers, 8 oz each) at room temperature
¾ cup Confectioner’s sugar
5 Egg yolks
1 shot glass of Whiskey (or Brandy)
10-15 cups Coffee (brewed)
1 package of Lady Fingers
Cocoa Powder
Instructions:
1. Using an electric mixer, mix the mascarpone cheese, sugar, eggs and whiskey
2. Layer the cheese mixture on the bottom of a 9x13 pan, then one at a time, dip the ladyfingers in the coffee until soaked but not soggy, and lay them side by side - continue alternating layers of cheese mixture with layers of ladyfingers (at least 2 layers of ladyfingers and end with cheese mixture)
3. Sprinkle the cocoa powder on the Tiramisù to cover it
4. Chill overnight if possible or at least 8 hours
