Food has the power to elevate your senses, to make a mundane evening something to remember and to make its way into your memory bank. In New England, the snow of February melts into a gray dreariness as we make our way into March. Even though the family as a whole is making adjustments to eat healthier, we still need something to look forward to and when I asked my children what I should make for (yet another) night at home, they were quick to respond “Nutella Skillet Chocolate Chip Cookie”! This simple recipe comes together quickly, except the part where you have to spread cookie dough on top of slippery melted Nutella, but I promise you...it’s worth it. Everyone savored their slice of the decadent cookie, licked their fingers, sighed happily and were still talking about it the next day. Everything in moderation I say....everything in balance. Nutella Skillet Chocolate Chip Cookie

Nutella Skillet Chocolate Chip Cookie
(Take approximately an hour but hands on time is only 15 mins and serves 6-8 people depending on size of slice)
Ingredients:
½ cup butter (1 stick)
½ cup light brown sugar (packed)
½ cup granulated (white or I use Organic Cane) sugar
2 tsp vanilla extract
1 large egg
1 cup all purpose flour
½ tsp baking soda
½ tsp salt
½ cup semi sweet chocolate chips (regular or try Mini as the mini make it easier to spread)
½ cup Nutella (put in a pyrex measuring cup)
Instructions:
1. Preheat oven to 350 F and line a 9”cast iron skillet or pie plate with parchment paper
2. In a large bowl, cream the butter, sugars and vanilla until light and fluffy then mix in egg
3. In a separate bowl, whisk together the flour, baking soda and salt then add to butter mixture until combined & fold in half of chocolate chips
4. Spoon half the dough into the prepared pan
5. Melt (slightly) Nutella in the microwave (30 sec) and spread over dough leaving 1 inch of space around the perimeter
6. Top with remaining dough, smoothing the layer with the back of the spoon or your fingers
7. Sprinkle with remaining chocolate chips
8. Bake for 25-30 mins for a gooey cookie or 5-10 mins more for a firmer cookie
9. Cool for approximately 10 mins before serving
