
Makes: 2 large loaves or a large, medium and a mini loaf
Time: 15 min prep and approximately 60 min baking time
Oven: preheat to 350 F
Ingredients:
4 cups of white wheat flour, wheat flour, white flour or a combo
1 1/2 cups brown or organic sugar
1 tblsp flax seed (optional)
2 tsp baking soda
1 1/2 tsp salt
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1/2 tsp cloves
Mix all of these dry ingredients together using a whisk to break up lumps.
Note: if you missing one of the spices, no worries! You can always use more of what you do have and some spice combinations (like Pumpkin Pie Spice) can always be used.
1 cup plain yogurt (Greek yogurt has extra protein) or vegetable oil, butter or a combo (just needs to equal 1 liquid cup....use a liquid measuring cup like a Pyrex one with the red lines)
1 can pumpkin (I really taste a difference with the Organic canned pumpkin!)
2/3 cup cold or room temp water
4 eggs
Mix all these liquid ingredients until well blended.
2 cups mini chocolate chips or chopped nuts (optional!)
Now add the dry ingredients to the wet ingredients (this way you are less likely to have leftover flour mixture on the bottom) and mix gently until all ingredients are blended. If using chocolate chips or nuts, mix in now, folding gently.
Grease your loaf pans: for added ease, line with parchment paper and spray with butter spray (then you can just lift the bread out).
Bake for 50-60 mins checking for doneness with a toothpick or fork.
Note: mini loaves will be done after 45 ish minutes so be sure to check on them.
Cool: Flip over the pan to remove. These can be frozen and defrosted as you wish.
