Usually on Memorial Day Weekend I am planning cookouts and outdoor get togethers but not for 2021! The temperatures plummeted 20 degrees and it rained, rained, rained. Thus, I changed my plans, and brought out one of my all time favorite muffin recipes....Chai Tea Muffins....easy, quick and oh so delicious with a cup of tea on a rainy afternoon. I have never met anyone that didn't like these, so even if you are not a Chai Tea person....try 'em. If my picky daughter Isabella loves them...you just might like them too. And to all those who have lost loved ones to war or who have loved ones serving now...thank you for your service and your sacrifice.

Chai Tea Muffins
(takes 30 mins start to finish)
Ingredients:
1 ¾ cups All-purpose Flour
½ cup Packed Brown Sugar
1 tsp Baking Powder
1 tsp Baking Soda
¼ tsp Salt
2 Chai Tea Blend Tea Bags, opened
1 cup Buttermilk
¼ cup Butter, melted & cooled
1 ½ tsp Vanilla, divided
1 Large Egg
½ cup Powdered Sugar
1 tblsp water or milk
Instructions::
I1. Preheat oven to 375 F
2. With a whisk combine flour, brown sugar, baking powder, baking soda, salt and Chai Tea leaves in a large bowl
3. In a separate bowl mix buttermilk, melted butter, 1 tsp vanilla and egg thoroughly
4. Add buttermilk mixture to flour mixture, mixing only until combined (don’t over mix)
5. Divide batter into greased or lined 12 muffin cup pan
6. Bake for 15 mins, until tops lightly browned
7. Cool, then remove from pan
8. Combine powdered sugar, ½ tsp vanilla & water for icing and drizzle over muffins
